Making new soup

I have a strong urge to make a pot of soup today so I settled on Minestrone. Fortunately I have all the ingredients on hand so I only have to assemble them and sit back while it simmers on the stove.

I really love to make homemade soups. The only problem is that I keep adding stuff and pretty soon I have way too much. After eating it for several days, it gets boring so then I put the rest in plastic containers and freeze it.

That would be great except the next time I want soup, I want to make it, not defrost it.

There's just no enjoyment to defrosting old soup!

Yum. Homemade minestrone is one of my favorites. I never seem to have all the right things on hand, but fortunately most recipes are adaptable (and Rainbow is close). I never mind heating up frozen soup. If it smells good I think it's almost as good as new!

Making soup, for me, is such therapy. It's the whole chopping ritual that is so relaxing. The dogs wait at my feet for bits of carrot and celery. My MIL lives right across the alley from us, so she always gets some. You're right...frozen, then defrosted soup never tastes the same; and after three days...it often ends up in the dog dish!

We love our home made soups but I do tend to make a batch and then freeze the remainder for those days when I know I'm going to be pushed for time. I haven't made minestrone for ages though....and guess what I fancy now. Must dash and check out the larder!

I used to make soups when I was a student then for years I didn't make any. I'm just now rediscovering the delight of homemade soup made from whatever is to hand!

The soup was wonderful but by the time it was done, it wasn't really minestrone anymore. I don't use a recipe so it becomes a balancing act getting the flavors to my taste. After I added the canned tomatoes and kidney beans, it was still missing something--you might say "middle notes". I evened it out with a can of low-fat refried beans and diced polska kielbasa. Vast improvement! But, once again, I made way too much. I'm incorrigible!
